Heavy cream and whole milk – I’m using both in this recipe, although whole milk has a bit more carbs than cream. The reason for this is that the combination creates a rich and creamy ice cream with just the right texture. I highly recommend the combination of both – low fat milks will make the ice cream icy instead of creamy.

protein powder – I developed this Anabolic Ice Cream recipe using Pure Protein Vanilla Cream brand protein powder. It is a whey based protein powder that I enjoy. You can also use other types of protein powder.

collagen – A few scoops of unflavored collagen powder adds extra protein to this ice cream.

Vanilla extract – This brings out the flavors of vanilla milk, cream and protein powder.

Sweetener – Use a sugar-free powdered sweetener, such as Swerve, to give the ice cream the right amount of sweetness.

Other low carb powdered sugar substitutes to try include Besti Allulose Sugar Replacement or Lakanto Monk Fruit Erythritol Blend.

How to make anabolic ice cream from scratch

Start the day before by making sure the bowl of your ice cream maker has at least 24 hours to freeze.

  1. In a blender, combine heavy cream and whole milk.
  2. Then, add vanilla protein powder, sugar-free sweetener, collagen, and pure vanilla extract.
  3. Mix ingredients until fully combined and mixture is smooth, about 30 seconds.
  4. Transfer the ice cream base to your ice cream maker and beat according to manufacturer’s instructions, until thickened with the texture of soft serve ice cream.

Use quality ingredients – When making homemade ice cream, you’ll want to make sure you’re using high-quality ingredients for the best result.

Chill out – If possible, always start with cold ingredients. This is important for homemade no-churn ice cream recipes and sundae recipes.

Don’t skimp on fat High-fat milk and cream are essential for making homemade ice cream. Opting for a low-fat option often leads to frozen sundaes and inconsistency in texture.

Don’t go crazy with plugins: If you’re adding extra ingredients, choose one or two and make sure they’re cut into pieces no bigger than a cranberry or pea.

Use your favorite sweetener – But be sure to use one that comes in a powdered version. It is also important to use a sugar-free sweetener that is a 1:1 substitute for sugar. There are some sweeteners that are much sweeter than sugar and will not work well here.

This recipe creates a basic vanilla anabolic ice cream that’s easy to customize with other low-carb, high-protein flavors and toppings.

  • 1 cup vanilla protein powder

  • 0-½ cup sugar-free pastry sweetener (such as Swerve) **see notes**

  • 2 servings of unflavored collagen

  • 2 teaspoons of pure vanilla extract

Instructions

  1. Freeze your ice cream maker according to the manufacturer’s instructions.
  2. In a blender, combine heavy cream, whole milk, vanilla protein powder, sugar-free sweetener, collagen, and pure vanilla extract.
  3. Mix ingredients until fully combined and mixture is smooth, about 30 seconds.
  4. Pour the mixture into your ice cream maker and beat until frozen; on my Kitchenaid ice cream maker, this took about 15 minutes.
  5. Transfer the soft serve to a loaf pan and smooth out into an even layer. Wrap tightly with plastic wrap and chill until completely frozen, at least 4 hours.
  6. Once the ice cream has set, remove it from the freezer and let it sit at room temperature for a few minutes to soften. Then take out and enjoy.

  • The amount of sweetener needed will depend on how sweet the protein powder is. If your protein powder is sugar free, feel free to add the entire ½ cup. If your protein powder is already sweetened, start with no added sweetener and then try the ice cream base after mixing. If needed, add ¼ cup sweetener and taste again before freezing. I used ¼ cup sweetener with Pure Protein Vanilla Cream powder.
  • This ice cream is vanilla flavored, but you can customize it however you like: swap out the vanilla protein powder for chocolate, strawberry, cookies and cream, etc.
  • You can also add a swirl of melted peanut butter before freezing in Step 5.
  • Try swapping out the vanilla extract for cake batter flavor, chocolate extract, coffee extract, or almond extract.
