How to freeze lemons

In our opinion, it is preferable to grate and squeeze the lemon first so that you do not have to do it after defrosting it. But either way it works! Here’s what you should know:

  1. To freeze whole lemons: Place the lemons in a resealable plastic bag and place in the freezer.
  2. To freeze juice and zest: Zest the lemon and place the zest in a resealable plastic bag. Squeeze the lemons and place the juice in a small container or ice cube trays (the volume of each cube in a standard tray is about 2 tablespoons). Once the ice cubes are frozen, transfer them to a resealable plastic bag.
  3. Mark the expiration date. Use a permanent marker to label with an expiration date 3 months in the future.
  4. Freeze. Place the container or bag in the freezer and freeze for up to 3 to 4 months. For best results, use within 3 months.
