Leftover quiche and want to save it? It turns out that the freezer is a great option! Cooked quiche freezes great and is a lifesaver for quick weeknight meals. Heat up and you have dinner in no time! It’s one of our favorite leftovers to stock our freezer (even our son loves it). There are a few tips and tricks for freezing this tasty cake, so here’s what you need to know!
Can you freeze the quiche?
Quiche freezes well – it’s an easy way to preserve its salty flavor and flaky crust. The best way to freeze quiche is to bake it first. Freezing raw quiche and then baking it can be tricky to get it cooked perfectly, and it doesn’t save a lot of time. But the baked quiche freezes perfectly wrapped in individual pieces in aluminum foil and placed in a resealable plastic bag.
If you want to freeze the quiche without baking, we recommend that you freeze the quiche batter separately from the filling. You can prepare the filling including the eggs and refrigerate it up to 3 days in advance. Then fill the crust with the filling and bake. (We’ve only had success with freezing baked quiche, so proceed at your own risk.)

How to freeze quiche
Ready to freeze quiche? For more consistent results, freeze after baking. You can freeze it in pieces or as a whole cake. This is what you should do:
- Let the quiche cool to room temperature. This process is best for leftover quiche. (You can also freeze the whole cake at once, but if so, it’s best to use a metal pan for reheating.)
- Cut the quiche into pieces and wrap in aluminum foil. You can wrap a few pieces together or wrap individual slices. (If freezing a whole pie, cut it into pieces, then wrap the entire pie pan in plastic wrap, then aluminum foil. Make sure the pie pan is metal. Otherwise, just remove the pieces from the pan for cake and wrap them in aluminum foil. .)
- Place the quiche pieces in a resealable plastic bag. Remove any extra air from the bag with a straw, and then seal the bag.
- Label with a “Use By” date 3 months in the future.
- Freeze for up to 3 months, keeping in mind that the cooler the better.

When thawed from frozen, the quiche maintains its creamy filling texture and flaky pastry once reheated. This is how you reheat the quiche:
- Preheat oven to 350°F. Do not thaw the quiche before heating it.
- Unwrap the pieces and place them on a baking sheet.
