This Blueberry Cobbler recipe is a twist on the latest version, an adaptation of my mom’s favorite recipe she makes every summer. He got his recipe from her church cookbook, and you know it’s got to be good! Our version uses similar ingredients: flour, butter, sugar, and milk make up the cobbler’s topping, and blueberries are lightly sweetened and mixed with lemon juice and zest to accentuate its spiciness.   • 3 cups blueberries
  • 1 ¼ cup granulated sugar, divided
  • 1 tablespoon lemon juice plus 1 teaspoon lemon zest
  • ½ teaspoon cinnamon
  • 1 cup all purpose flour
  • 2 teaspoons baking powder
  • ½ teaspoon kosher salt
  • 6 tablespoons melted butter
  • ¾ cup milk
  • 2 teaspoons vanilla extract

  1. Preheat oven to 350°F.
  2. Toss blueberries with ½ cup granulated sugar, lemon juice, lemon zest, and cinnamon in a medium 9 x 9 or 7 x 11 baking dish.
  3. In a medium bowl, combine the all-purpose flour, ¾ cup sugar, baking powder, and kosher salt. Add the melted butter, milk, and vanilla and mix until a smooth dough forms.
