How to make the PERFECT sticky rice for sushi

When it comes to sushi, you have to get the rice right. It has to be sticky, smooth and wet, just like the ones at your favorite sushi restaurant.

To help you achieve sticky rice perfection, here’s an easy step-by-step guide:

  1. Rinse 1 cup of uncooked rice under cold water for 2-3 minutes.
  2. Add the rice to an Instant Pot and add 1 cup of water. Stir and make sure all the rice is covered in water.
  3. Cook the rice on high pressure for 4 minutes and then naturally allow the rice to naturally release for 8 minutes. Release the rest of the pressure and fluff the rice.
  4. Set aside until ready to use.

Top tip for rolling up a spicy tuna roll

To roll the sushi without it falling apart on you, it is important to keep hands and mat wet. This will help prevent sticking and make rolling easier. Then as you roll, gently squeeze the roll to tighten it as it forms. This will compress the rice so it holds together and doesn’t fall apart when you cut into it.

If the ingredients start to move during rolling, don’t worry! Just push them in and keep rolling. If you can’t get it on your first try, that’s totally fine! Just keep practicing until you get the hang of it. It will taste good, regardless!

Frequently asked questions

What is the best type of rice to make sushi?

For best results, short grain rice should be your choice. It is rich in starch and sticky enough for each piece of sushi to hold its shape.

But don’t worry if you can’t find short-grain white rice in the store, medium-grain rice is also a good substitute. Just make sure you don’t use long grain rice, as it won’t have the same texture.

What is a spicy tuna roll typically made of?

It is usually a combination of 3 ingredients: sushi rice, sashimi grade tuna, nori (seaweed), and a spicy mayonnaise sauce. We made our Spicy Tuna Roll recipe a little fancier by adding green onions and furikake!

What if I don’t have a sushi mat?

Although using a sushi mat makes rolling your sushi rolls much easier; you can always use the towel trick. Simply place the towel on your counter or table and place your nori sheet on top. Spread a thin layer of rice over the nori and place the fillings in the center of the rice, then use the towel to help create a tight roll.
