  • 1 cup of fonio

  • 2 cups coconut milk, divided

  • 100g butter

  • 3 medium eggs

  • 2½ cups almond flour

  • 1½ tablespoon baking powder

  • 1 teaspoon of baking soda

  • toppings (fresh fruit, nuts, maple syrup, etc.)


  1. Add fonio and 1 cup of milk to a microwave-safe bowl. Microwave in 20 second intervals until fonio is soft.
  2. Add cooked fonio, butter, remaining 1 cup milk, and eggs to a blender. Mix until the mixture is smooth. Put it in a bowl and set it aside.
  3. In a separate bowl, add the flour, baking powder, and bicarbonate of soda. Add the dry mix to the wet mix and mix until you have a thick batter.
  4. Add a bit of butter to your pancake pan, and then pour in 2 tablespoons of batter for each pancake. Fry over very slow heat. Flip once you see bubbles form. Once fully cooked, transfer pancakes to serving plates.
  5. Add your favorite ingredients and serve. Enjoy!
